According to new research from the Monell Center located in Philadelphia, PA, the tongue is composed of these specialized sweet-tasting cells that synthesize digestive enzymes in response to the detection of sucrose. These enzymes breakdown sucrose into smaller fragments known as fructose and glucose. It is because of these two simple sugars that we are able to detect sweet foods!
